Texas Chili

  1. Toast chiles in cast iron until fragrant, 2-3 minutes per side. Soak chiles in hot water until soft, 15-45 minutes, turning once.
  2. Chili paste: Drain the chiles, split and remove stems and seeds. Mix together chiles, cumin, black pepper, 1 tbsp kosher salt (1/2 tbsp table salt), 1/4 cup water. Blend into a smooth paste, adding more water as needed.
  3. Beef: Lightly brown the beef in the lard in 2 batches.
  4. Saute onion and garlic for 3-4 minutes.
  5. Simmer: Add in the stock, remaining 2 cups water, and masa harina. Add the chile paste. Add the beef and any juices and bring to a simmer.
  6. Slow cook around 4 hours.
  7. Stir in the brown sugar and vinegar, add salt to taste.
  8. Rest: Turn off heat and let chili stand for 30 minutes to thicken.
  9. Reheat and serve with sour cream and lime.
